V’s Roasted-Banana Nut Bread
This Will Make It Taste Good
I'm always looking for a new take on banana bread, so when I had some bananas getting too ripe on the counter, I looked in my cookbooks for a recipe and found this one. Luckily, I had all the ingredients on hand, even plenty to make a batch of V's Nuts to put in it.
I found this recipe to be more like a cake than most banana breads -- it's not as dense or moist, which to me is a good thing. It's got a great flavor and texture, and the crunchy, slightly spicy nuts are a good foil for a sweet bread.
