Rodney’s Reluctant Collards

Collards are a pretty standard side at all eastern North Carolina barbecue restaurants, and also on most holiday tables. Other areas might tend toward turnip greens or mustard greens, but in ENC, it's collards.

Rodney says he doesn't like collards because to him they are bitter, but he likes other greens like turnip greens. I like collards and don't think they're bitter, but can't usually even eat turnip greens or mustard greens at all because of their bitterness. So you never know!
