Peanut-Sesame Noodles
Milk Street Tuesday Nights
This is an almost no-cook recipe; all you have to cook is the noodles. It tastes great warm, room temperature, or even cold from the fridge. (Trust me, I tried it all of those ways.)
If you're even more pressed for time, you can make the sauce ahead; it will store in the fridge for up to a week. It makes a great side dish, but to round it out for a meal all you have to do is top with your favorite (prepared) protein. I also like to add some chopped "Asian" salad from a kit when I'm making a fast weeknight meal, for extra vegetables.
