Bulgur-Tomato Salad with Herbs and Pomegranate Molasses (Eetch)
Milk Street Tuesday Nights
I was looking for something to do with my abundance of cherry tomatoes this summer, and found this! Bulgur wheat is a hearty grain, and the fresh tomatoes and herbs lighten it up quite a bit. The pomegranate molasses add a nice tang, and probably make the dish for me.
A viewer noticed that we left out the part where I added spices to the bowl of chopped garlic while I was the cooking the peppers. That was just cumin (quite a bit!), black pepper, and Aleppo pepper if you have it. If you don't, you can omit it or substitute a bit of red pepper flake, which is what I did.
We enjoyed this, but I think my bulgur could have been cooked a little bit more. I'm sure with more experience I would figure that part out. It also might have been because I used a "whole" bulgur rather than "coarse", but that's all I could find locally. You can definitely find it online, and I am sure a middle eastern grocery would have had it, but those are not convenient for me.
I can see this as a good summery side to go with grilled meat. How would you serve it?
