I honestly did not have high hopes for this recipe. Before I bought this cookbook, I checked it out of my local library. One of the recipes I tried then was a different pasta recipe, and that one didn't work. The pasta wasn't quite done, definitely less done than even al dente, so it wasn't really a pleasure to eat.

But this worked! The spaghetti was cooked perfectly and the sauce coated everything nicely without being too watery. It even worked well as leftovers. The only down side was that it was a little more difficult to twirl on my fork, since you have to break the pasta in half to fit in the instant pot.

I don't usually make (or order) this type of sauce usually, so I can't attest to its authenticity, but I can say it works and tastes great. If you DO know about authentic Italian pasta all'Amatriciana, I'd love to heard what you think of the recipe in the comments.
