Orecchiette with Sardinian Sausage Ragu

While this isn't "dump and go", since you have to brown the sausage and let some of the liquids reduce before you pressure cook it, it's still a very easy weeknight (or busy weekend) meal. One of the best things about an instant pot is that you CAN brown things and reduce them in it without dirtying any other pots or pans!

Another is that it turns meals that require a longer cook into something you can make on a weeknight, but I'm not sure that's a problem for this type of thing. You could probably make it in a pan on the stove, much like a Hamburger Helper type meal, but it definitely would take more time to cook.

This one was tasty and hearty, but I think I'd prefer it with a little heat. I chose a sweet Italian sausage, but I suspect it would be that much better using a hot variety. You could also just add some red pepper flakes yourself. Like pizza, adding those after cooking would let you customize heat to each person's palate.
