Lemony Orzo with Chicken and Arugula

This is a great, quick-cooking one-pot meal that lived up to all my expectations!
I love cooking with boneless skinless chicken thighs, since they cook so quickly and don't get dry like chicken breast does. The mint, lemon, and arugula with the chicken broth based "sauce" felt light and like the perfect spring meal. It all came together pretty quickly in the instant pot, so it would also be great for a hot summer day.
