Chickpeas and Cucumbers with Chutney Vinaigrette

I absolutely loved this salad. And yes, I would call it a salad! It tastes fresh and light, but it's also filling because of the protein and fiber in the chickpeas. The tamarind chutney vinaigrette is perfect!

You could very easily make a smaller batch, and even use canned chickpeas and probably not lose much of the flavor. The Simple Chickpeas (https://cookwithheather.com/Milk-Street-Fast-and-Slow-Simple-Chickpeas/) are good, but not very strongly flavored. This recipe adds a lot of very strong flavors, and they all work well together.
