Grilled Okra, Corn, and Tomato Salad with Jalapeño Dressing
I Am From Here
Okra is one thing that I can grow pretty well here in eastern North Carolina. So far, no bugs or diseases have attacked it, and a few plants gives me plenty for my family to eat okra at least once a week.
I didn't do a very good job of keeping on top of cooking it as it came in for a while, so I had a lot to use up when I found the okra chapter in I Am From Here. This grilled okra and corn salad seemed like something we'd enjoy, so it was first up!
I found this recipe online here, though the spice ratios are not exactly those listed in the book: https://www.foodandwine.com/recipes/grilled-okra-corn-and-tomato-salad
