Freezer Fried Okra

If you have an abundance of okra from your garden, you can freeze it! This is a super simple method that I came up with when I had more okra than I could deal with this summer. I am sure there are plenty of similar ones out there, but I just decided to try it the way I've been making fried okra all summer.

All you need is a bunch of okra, sliced however you prefer. Toss that in a plastic bag, and add as much buttermilk as it needs -- for the amount I had, about a half of a gallon-sized bag, it took about 1/3 cup. Then toss in enough of the breading mixture to coat so that it is all dry -- no goopy batter, you want them easily separated.

Then spread them out on a covered baking sheet (wax paper is fine, but you could use parchment or a silicone baking sheet) and freeze for at least 4 hours (I usually let it go overnight.) Then you can store them in freezer bags until you want a taste of summer!

I have also now frozen some okra plain, sliced but not breaded, so I am ready for some winter gumbo.

You can scale this as much as you need; the breading mix will keep in the cabinet for next time. I made about 1.5 recipes of this size in the video and used about half of it for the amount of okra I had.

1 cup self-rising flour

1 cup corn meal

1 tsp kosher salt
