This is a base recipe used in several other recipes in the Dishoom cookbook. Luckily, you can freeze it in whatever amounts make sense for the recipes you plan to make and it will last a lot longer!
This recipe makes enough for two batches of the Mattar Paneer (https://youtu.be/gyp-U33KJZY) we made it for, so I just froze what I didn't use this time for the next time, since we liked it a lot.
