Kachumber, what the book calls the closest thing they have to a salad, is very close to something that graces tables in the southern US all summer long. It's great to pair with heavier dishes, as it's cool and crunchy. Add or remove elements to your liking, or in accordance to what your garden is giving you this season. The only requirement is the cucumber!
