Gunpowder Potatoes

The potatoes I got for this recipe ended up a little smaller than usual; I think it's probably best with slightly larger ones -- but not too big! I think it would work best with two-bite potatoes (maybe one very large bite.)

I looked back at our pictures from our meal at the restaurant last year, and we did try these potatoes! My son remembered them -- he said they were much spicier than these turned out. I do remember him drinking a LOT of water that night. I suspect the chiles you choose will greatly influence the spice level, and I did remove the seeds and white membrane from inside the jalapeños I used to help tone down the heat.
