Tomatoes and Rice
Deep Run Roots
I planned to make this recipe last year, when I made the Tomatoes in Jars (https://cookwithheather.com/Deep-Run-Roots-Tomatoes-in-Jars/) from this same book. I used my own homegrown tomatoes, and the flavor of these was the highlight of this recipe.
However, the method for cooking the rice just...didn't work for me. I swear, I used to be able to cook rice on the stovetop just fine, but ever since I got a rice cooker, any time I try it on the stove it just doesn't work. Luckily, you can very easily use whatever method you like to cook the rice for this simple recipe -- including a rice cooker.
If your tomatoes are as juicy as mine were, you might want to hold back some of the liquid. I don't believe the goal here is soup.
