Soft Poppy and Peach Granola Cake

Deep Run Roots

This COULD be a dessert cake, but you might be disappointed. Instead, think of it as a breakfast cake. (Or serve it warm with some decadent ice cream.)

I also had a couple small problems with this recipe. First, I don't think the cast iron skillet did much for it, and since mine isn't super well seasoned, it stuck to the sides and was really hard to clean. So I wouldn't do that again; just spread it in a glass or ceramic baking dish instead. Also, the flax seeds got stuck in my teeth. I would use something else. But you can definitely make this your own! Choose nuts and seeds you like, add more sugar if you prefer it sweeter, change out the fruit seasonally. (For hard fruits like apples, you may want to pre-cook them with the sugar rather than just letting it macerate, though.)
