Fig and Honey Bourbon Slush

I was really sad not to be able to have more of this, but I have a latex allergy and that is related to a (raw) fig allergy. But my husband loved it so much, and we had so many figs that needed to be used up quickly, we made two batches!
This could definitely do with a longer freeze between churning and serving; at two hours after it was still pretty loose, but was much more of a slushy (and not chunky, because of the bourbon) consistency the next day. I highly recommend making this at least one day before you serve it. I do think because of the bourbon you could get away with doing this without the ice cream maker, and just making it more like a granita, stirring it with a fork every hour or so.

[00:14]: was time to harvest them all
[00:16]: and so he brought us a bag of figs so
[00:20]: i turned to deep run roots and i found
[00:22]: the fig section and
[00:24]: the first recipe that caught my eye was
[00:26]: the fig and honey
[00:28]: bourbon slush we love bourbon talked
[00:31]: about that before
[00:33]: i personally love fresh figs but
[00:36]: uh i'm kind of allergic to them so i'll
[00:40]: be interesting to see if i can drink
[00:42]: this without problems
[00:43]: i it's not a hive type reaction it's not
[00:46]: going to make me
[00:47]: stop breathing but you know makes my
[00:49]: mouth feel tingly
[00:51]: anyway since this isn't cooked it might
[00:54]: cause that reaction
[00:56]: but we'll see so that's what we're going
[00:59]: to make today we're going to make fig
[01:00]: and honey bourbon slush and i've got all
[01:04]: the ingredients here
[01:06]: we're going to do some in the blender
[01:08]: some on the stove
[01:10]: and then mix the rest together so i'm
[01:12]: just gonna have to kind of be a little
[01:14]: careful that i don't add the wrong
[01:15]: things at the wrong times
[01:16]: but first thing that goes in is figs
[01:20]: these are brown turkey figs i think i
[01:23]: have
[01:23]: slightly more than the recipe
[01:26]: technically calls for but
[01:27]: these are all the ones that were a
[01:29]: little bit mushy and just needed to be
[01:30]: used up which is
[01:31]: this is the perfect recipe for that um
[01:34]: and brown turkey figs are the kind that
[01:37]: she talks about
[01:38]: that are prevalent across eastern north
[01:41]: carolina
[01:41]: so
[01:47]: to the figs in this blender we add
[01:51]: orange juice so i have some um
[01:56]: fresh cold pressed orange juice that i
[01:58]: bought at the grocery store instead of
[02:00]: making my own
[02:05]: and we are just going to process this
[02:08]: until we have a smooth puree
[02:13]: all right
[02:16]: my blender has a puree button so i'm
[02:18]: just going to hit that
[02:23]: check it out
[02:27]: it looks good to me that's great
[02:30]: so we are just going to
[02:35]: there we go we're just going to leave
[02:36]: this be and we're going to combine some
[02:38]: other ingredients
[02:40]: into a pan
[02:43]: so i've just got a small pan here let me
[02:46]: move this out of the way
[02:52]: so i've just got a small pan here and
[02:54]: we're going to add
[02:56]: water just a little bit of water
[03:01]: and we're going to add
[03:07]: yeah we're gonna add the honey being
[03:10]: really careful to do things in the right
[03:12]: order today
[03:15]: and in the right
[03:21]: and we have a couple of strips
[03:24]: of just orange zest
[03:29]: that we're going to put in here now i'm
[03:31]: not gonna show you this part
[03:32]: but we're gonna put this on the stove
[03:34]: and she does not say
[03:36]: what temperature or anything but bring
[03:38]: it to a simmer
[03:39]: and simmer it for five minutes and
[03:42]: that's it
[03:43]: and then we'll be back okay
[03:46]: so our uh honey and
[03:49]: water and orange rind have
[03:52]: orange zest not the whole rind have uh
[03:57]: have been simmering for five minutes and
[03:58]: i let it cool for a couple just so it
[04:00]: wouldn't be
[04:01]: like boiling hot and now we take out
[04:05]: the orange zest i'm just gonna put it
[04:09]: over here
[04:09]: because we don't want that in our
[04:13]: drink
[04:16]: so there we go and we're going to mix
[04:18]: everything else
[04:20]: together i'm going to take advantage of
[04:22]: this
[04:23]: pour spout and we'll see how that works
[04:25]: out
[04:26]: i'm going to put my fig and orange juice
[04:28]: mixture in
[04:29]: first just
[04:36]: so it's not immediately really hot stuff
[04:38]: going on a plastic because that makes me
[04:39]: feel weird
[04:40]: anyway so now i'm going to add our

[04:56]: okay put that over here
[05:02]: so we're gonna be sort of whisking all
[05:05]: of this together
[05:08]: and now we add all of the other
[05:11]: ingredients so everything goes in here
[05:13]: um and so i'm going to add some lemon
[05:16]: juice
[05:16]: fresh lemon juice didn't cheat this time
[05:20]: and i'm going to add
[05:23]: some ginger beer so this is also
[05:26]: alcoholic and yes i am supposed to add
[05:31]: it
[05:33]: at this point not later i verified since
[05:37]: i've done that wrong before
[05:40]: there we go i think it just provides
[05:44]: flavor not the
[05:45]: bubbles because those are mostly mostly
[05:47]: gone because we're supposed to whisk
[05:49]: this
[05:50]: and then bourbon this is just our
[05:53]: favorite sort of
[05:54]: mixing bourbon nothing too special
[05:58]: probably just because it's you know
[06:02]: in a bunch of syrup but you know use
[06:03]: what you like
[06:14]: all right that is all mixed up
[06:17]: and we have to chill it uh we're gonna
[06:20]: chill it definitely overnight you just
[06:22]: want it to be
[06:22]: thoroughly chilled in the refrigerator
[06:26]: and then we're going to turn it in an
[06:28]: ice cream maker
[06:29]: so we'll be back with that in just a
[06:31]: minute our fig and honey bourbon slush
[06:34]: mixture has been in the refrigerator
[06:36]: overnight
[06:38]: and we are ready to churn it we're going
[06:40]: to turn it in our ice cream maker this
[06:42]: is just one where this
[06:43]: part this red part goes in the freezer
[06:45]: and we turn it
[06:47]: according to the manufacturer's
[06:48]: instructions mine basically just says
[06:50]: everything should be done within 20
[06:52]: minutes so i'm gonna have to check on it
[06:53]: but
[06:54]: um it might take two batches um
[06:58]: this says it will turn a quart and a
[07:01]: half which is what this should be but
[07:03]: i think it might be a little bit more
[07:04]: than six cups
[07:06]: so anyway
[07:10]: especially if you're gonna do more than
[07:11]: one batch you need to make sure you
[07:12]: whisk it up to
[07:13]: get all of the solids re-incorporated so
[07:17]: that your batches are pretty much the
[07:18]: same
[07:19]: because it might settle out so i'm just
[07:21]: going to put this
[07:22]: back on so i can
[07:26]: pour it and turn on my ice cream maker
[07:30]: and then i'm gonna pour
[07:40]: but we're gonna come back
[07:43]: i'm going to check on it 10 minutes or
[07:46]: so
[07:46]: to see it's not going to freeze entirely
[07:49]: like an ice cream would because
[07:51]: of the bourbon but

[07:59]: 10 minutes 20 minutes we'll let you know
[08:04]: just turn this off it's been probably
[08:06]: about 30 minutes and it's not getting
[08:08]: very
[08:09]: um i mean it looks kind of like a
[08:11]: slushie i guess but it's not super icy
[08:13]: or it's definitely not super frozen
[08:17]: but i guess that's what it's supposed to
[08:19]: do it um
[08:20]: took a while to get to this stage too so
[08:24]: i'm just gonna call it done you can do
[08:26]: this without an ice cream maker and
[08:28]: you put it in the freezer and basically
[08:32]: run your fork through it stir it up with
[08:33]: a fork every hour or so
[08:35]: until it's you know where you want it to
[08:36]: be
[08:38]: there we go so
[08:42]: i'm just going to pour this into i have
[08:44]: a
[08:45]: container that i know goes well into my
[08:47]: freezer so i'm going to
[08:49]: pour this in there do my best
[09:02]: so when i do ice cream it freezes to the
[09:04]: side
[09:05]: um this is not doing that so
[09:09]: but my hand is very cold right now
[09:14]: all right okay
[09:18]: so wash that up and put it back in the
[09:19]: freezer for next time
[09:21]: and we're going to put the lid on this
[09:23]: and put it in the freezer for at least
[09:25]: an hour
[09:26]: and then it's ready to consume
[09:29]: so we'll show you what it looks like
[09:31]: when we try it
[09:37]: i think our slush has been in the
[09:39]: freezer for
[09:40]: two hours at this point and it's it's
[09:43]: not
[09:43]: it's certainly not frozen but it seems
[09:46]: like a decent
[09:46]: um sort of slurpy kind of
[09:50]: consistency so i got an ice cream scoop
[09:52]: to help get it out just in case
[09:54]: it seems like around the edges it's a
[09:56]: little more frozen but i'm going to
[09:58]: this is going to be very messy i don't
[09:60]: know if this is the
[10:02]: the best serving this is probably not
[10:05]: the best
[10:06]: scooping method but
[10:10]: i'm going to just
[10:14]: put some in here our seems a little less
[10:17]: icy
[10:18]: than hers but not bad
[10:22]: and i'm going to put a straw in it
[10:25]: and clean off the edges
[10:29]: and there we go that's our fig and honey
[10:33]: bourbon slush
[10:43]: take a take a little sip
[10:52]: that's tasty it's not very sweet you can
[10:55]: definitely taste the bourbon
[10:58]: but um and it it goes through the straw
[11:01]: very well
[11:01]: i'd be interested to see how well it
[11:04]: like if it freezes harder the longer
[11:06]: it's in there but
[11:08]: i don't think it's gonna freeze too hard
[11:09]: so
[11:11]: uh i really enjoyed it it was not that
[11:13]: difficult fresh figs are
[11:15]: hard to come by very seasonal so if you
[11:18]: have access to them
[11:20]: please and you like them and you like
[11:22]: bourbon
[11:23]: go ahead and make this uh you do need
[11:26]: the
[11:27]: you don't have to have the ice cream
[11:28]: machine um that's the sort of
[11:31]: preferred way to make it but you can
[11:33]: make it sort of like a granita you can
[11:35]: look up
[11:35]: you know that method you just put it in
[11:38]: a dish
[11:38]: in the freezer and use a fork to stir it
[11:41]: up to sort of make it smaller crystals
[11:44]: but yeah that's it if you liked
