Snickerdoodles

Snickerdoodles weren't a thing my family made at the holidays when I was a kid, and I have rarely made them myself since, and yet somehow they have become my son's favorite cookie. When he asked me to make them for Christmas, I found this one in a book I've had for almost a year but hadn't cooked from yet.
The good news about these is, the dough does not need to be chilled before you bake them! You make the dough, scoop it out, roll in cinnamon sugar, and bake it immediately.
But they are a little fiddly, with turning the oven down after some cook time, and I think I was too impatient with it on the subsequent batches. The first batch was perfect, but the others got a little too brown and crispy with the same timing. They're definitely better slightly under baked than over baked.
If you are not a fan of the coconut flavor, definitely choose a refined coconut oil for these instead of the virgin coconut oil I used. Luckily, we like coconut!
