We filmed this on New Year's Day, because it's a tradition in the south to make black eyed peas on that day...but we don't actually like black eyed peas very much. This recipe uses Sea Island red peas, which I was surprised to find at my usual grocery store! I had never seen them there, but they're on a lot of higher-end menus so I've definitely eaten them before. I'm sure you could also use black eyed peas, or another small dried pea (they are in the crowder pea family), but the cook time might change a bit.

The peas were great, though mine ended up a bit salty, especially as leftovers. Not inedible at all, and great with the rice to cut it, but if you use bacon instead of pulled pork like I did you may want to go lighter on the salt at the end.

This is yet another failed rice recipe for me, but I really think it's because of my induction stove. Something about recipes like this one just doesn't work on my stove. I should probably test out some other options, but for now I'll just stick to my rice cooker.
