Banana Pudding
Rodney Scott’s World of BBQ
I'm not sure if I failed this recipe, or this recipe failed me.
I am fairly certain I could have gotten a good result with this recipe, but either the timing or the temperature did not work for me at all, and the direction to check for the pudding to coat the back of a spoon left it still soupy. I do think it would have set up fine with longer cooking or a higher temperature, and I have since read some good reviews of this recipe, so it might be just me, or my stove.
On another fail note, I don't think the whole recipe would have fit into an 8"x8" dish. It barely fit my 7"x11" baking dish. (I looked it up, and it looks like that dish holds approximately half a liter more in volume.) However, the flavor was very good! If you like more bananas, or more wafers, you could easily add an extra layer of those, splitting up the pudding into two batches.
If you like a whipped cream topped banana pudding, this could be the recipe for you. Just...cook it until it looks like actual pudding.
