BBQ Party Deviled Eggs
Rodney Scott's World of BBQ
This is a very basic deviled egg recipe from Rodney Scott. The special touches come with the toppings! Instead of the standard paprika, he dusts them with his Rib Rub (https://cookwithheather.com/Rodney-Scotts-World-of-BBQ-Rib-Rub/) and tops with pickled okra (we made some from a different book here: https://cookwithheather.com/Deep-Run-Roots-A-Pickle-Plate-for-Everyone/) and/or pork skins. Delicious!
I could not find the full recipe online, but you can totally do this by feel. Boil your eggs and peel them however you like; I used the method from Kenji on Serious Eats here: https://www.seriouseats.com/the-secrets-to-peeling-hard-boiled-eggs, but I cooked them a few more minutes (13 I think, but I'd go at least 15 next time, or maybe boil it hard for a minute or two before I turn it down next time.) Then add a touch of yellow mustard to the yolks, and enough mayo (Duke's if you can get it, or whatever your favorite is) to make the filling the texture you prefer. Fill the whites, top with your favorite crunchy topping, and it's ready to eat!
