Strawberry-White Balsamic Shrub
Outlander Kitchen
My husband is not generally a fan of a shrub -- the drink kind, not the plant kind. Usually the vinegar is just too overpowering, and it's not so pleasant to drink. This Strawberry-White Balsamic Shrub was good, even for him!
I'm not sure if it's the white balsamic vinegar, whether it's a milder vinegar than whatever we've had before, or if the strawberries (which were really good) helped it out. I didn't even end up adding more than the initial sugar into it. (The author suggests testing it out and adding more if necessary after the initial wait time.)
There are no specific suggested recipes for using this in the book, but the author does suggest diluting with club soda or water, or adding to a vodka or gin drink. My own research found suggestions to start with about 1oz of shrub per 3-6oz of water (or sparkling water of your preference) for a non-alcoholic drink (almost like lemonade,) or about 1/2 oz per cocktail.
We've tested it a few ways, and I prefer it with a liquor that has some flavor; the bourbon barrel aged gin we had was surprisingly good with this, especially considering that I don't usually like gin at all.
