Leek and Potato Soup
Outlander Kitchen
Apparently it took me over 20 years to learn that my husband doesn't like most puréed soups. How can that be? I make a few different types regularly, especially winter squash soups. And all this time he hasn't liked them? Whatever, fall is definitely soup season for me, so he'll probably be getting more of these soon.
This Leek and Potato Soup is warm, smooth, and delicious, with just a hint of cream. It could be a light lunch, or serve as an appetizer to a heartier meal. It's really easy to pull together and doesn't take a long time to cook.
I do strongly suggest adding something salty and crispy on top. I added crumbled bacon, and that was the perfect complement to this soup.
