Black Beans and Sweet Corn

For such a simple recipe, this packs a lot of flavor. That is thanks, in part, to the Simple Black Beans we used as the base (https://cookwithheather.com/Milk-Street-Fast-and-Slow-Simple-Black-Beans/), but the sweet corn is the perfect foil for the smoky beans.
We made a double batch, so had the opportunity to try it several ways. We had it plain, and kind of still cold, as a side. It was better warmed. We also tried it on nachos, which was really great! Once you make the beans, this comes together super quickly, especially if you use jarred roasted peppers like we did.
Black beans are a favorite of ours, so I can definitely see us making this again.
