Mallowmelt Cookies

My son loves the Keeper of the Lost Cities book series, and has been asking to make this cookie recipe he found in one of the books for a while. So we did!
This was a pretty easy cookie recipe, especially because it uses melted butter so you don't have to worry about waiting until it is room temp before you make them (or accidentally melting it when you're trying to just soften.) It does take some effort to scoop them after they chill, though, so if I made it again I would scoop them first and then chill the dough before baking. We got a few more cookies than intended, so needed a couple extra marshmallows, but otherwise it came together as expected.
You could use your favorite chocolate chip cookie recipe if you prefer, with a few modifications. Exchange some of the chocolate chips with butterscotch, pull them about three minutes early and add half a marshmallow on top before finishing them. You could add the optional drizzle, of course, but I think browning the marshmallows is the way to go!
