Chicken Ruby is Dishoom's name for butter chicken, and it was, hands-down, the best butter chicken I have ever eaten. It's been about a year since we went to the restaurant, and from my pictures it looks like we ordered this, but I can't for the life of me remember it being THIS good. I do remember staining my jacket with it, though, on the very first night of our trip.

Legend has it this dish was created by adding leftover Tandoori Chicken to a Makhani Sauce (which we made already!) for a staff meal. However it started, there's no wonder they keep doing it. I definitely will be making this one again.
