Squash and Fontina Casserole Pudding
Deep Run Roots
We're continuing with our "use up all the squash from the garden" series (by cooking through the squash chapter of Deep Run Roots) with this Squash and Fontina Casserole Pudding.
This is different from any other squash casserole I've ever had. It starts with the same basic well-cooked Squash and Onions (which we made here: https://cookwithheather.com/Deep-Run-Roots-Squash-and-Onions/) There's no cream-of-anything soup, or cream at all. Instead, it's cheesy throughout, with a crunchy bottom from lining the dish with cornmeal. The texture definitely reminds me of a bread pudding, even though there's no bread in it at all.
It's rich and savory, and uses up a ton of squash since it is cooked down so much to begin with. Try it when your garden is overflowing, or just when you want something new!
