Grilled Squash with Basil Pesto and Stewed Tomatoes

I couldn't find the exact recipe for this online, but it's pretty forgiving. Grill some squash, toss it with some pesto serve it on a bed of stewed tomatoes, drizzle with balsamic and top it all with some shaved parmesan. Boom! It could even be a vegetarian main if you serve it over some polenta (or rice if you're not feeling fancy.)

This is also a good option for when you've just about had enough summer squash for the season. Adding some tomatoes and pesto really changes the flavor compared to plain grilled squash.

This pesto has a lot of lemon in it, which I think helped it stay bright green longer than some. You could use any pesto you like, of course!
