Chilled Sun Gold Tomato Soup with Lots of Summer Stuff
Deep Run Roots
This summer I fortuitously planted sun gold cherry tomatoes (along with a few other types) and they did really well. So when I went looking through the Deep Run Roots cookbook for tomato recipes and found the Chilled Sun Gold Tomato Soup with Lots of Summer Stuff recipe, it felt like I HAD to make it. So I did.
I'm not normally a chilled soup kind of person; it's fine but not my favorite. This recipe made enough that we were able to try it both cold and hot (and somewhere in between) on different occasions. Both were tasty, though I would prefer it to be thicker for both. I do like a thick soup, so that might just be me, but even after reducing it for twice as long as suggested, it made more than the 7 cups the recipe said it would. So, maybe it is supposed to be a bit thicker?
The "Lots of Summer Stuff" part of the recipe also makes a lot, so I could have used more in the soup. (I thought it was enough, though, and more than the pictures make it seem since it tended to sink.) We tried it with fried fish, and that was a great application! I would highly suggest trying it as an accompaniment with meats that might need a little sweet and crunchy complement.
