Sam Jones calls this the easiest recipe in the cookbook. I would agree...as long as you don't have to debone your own turkey breast. But you do need some extra time. The turkey cooks at 250 degrees for a bit over 2 hours, depending on...all the factors, known and unknown, that effect barbecue. Once we wrapped it, we moved it into the oven for convenience. When it's all wrapped up in aluminum foil it won't get any more smoke flavor. If you've already got your grill set up and the heat will stay steady, no reason not to use it. Since we use a pellet smoker, why waste the pellets?
If you're looking for a smaller, easier option for a holiday meal, this really is very easy and perfect for 8-10 people. The rub doesn't clash with the usual turkey trimmings like you might think. It has a subtle smoky barbecue flavor that goes nicely with the standard turkey dressing (or stuffing) and gravy. We'll be supplementing a smaller whole roast turkey with this!
