Country-style steak is a staple in the south. It is humble dish, not fancy at all, but delicious. To be honest, I never use a recipe for something like this, but I'm glad this one was included in the book because it gave me a reason to make it!

This recipe introduced me to a method for making gravy that I haven't ever used before. The flour isn't cooked in fat, but instead dissolved in hot water before being added to the pan and cooked. I think it works in part because of the long cooking time to tenderize the meat. There's certainly not a raw flour taste in the end result.
