Smoked Chicken

Rodney Scott's World of BBQ

This recipe uses two things we've made from this book previously: Rodney's Sauce (https://cookwithheather.com/Rodney-Scotts-World-of-BBQ-Rodneys-Sauce/) and his Rib Rub (https://cookwithheather.com/Rodney-Scotts-World-of-BBQ-Rib-Rub/).Those two things, plus some chicken, and you can have some really tasty smoked chicken.

It does take some time, though. First, you have to prepare your chicken. If you get whole ones, per the recipe, first you have to spatchcock them, and then you just cut them in half. In some stores it is possible to buy chickens broken down like this, but you could also just use quarters or pieces and it would be fine -- you'll just have to adjust your cook timing.

The book has instructions on setting up a grill for smoking, but we used our pellet smoker. That makes this recipe even easier -- just set it, put the birds on, and you don't have to do anything for at least 90 minutes.
