Lamb Stew

Outlander Kitchen

This is a super simple, quick stew made from ground lamb, perfect for a weeknight family dinner. The spices, coriander and cumin seeds toasted and ground fresh, helped to disguise the lamb flavor that my husband doesn't like, but I think I would have preferred without those. Sometimes, I just want to taste the food itself and not heavy spices. My husband liked the spice profile, though, so your mileage may vary.

The author suggests serving this over rice or mashed potatoes (well, rice pilaf or colcannon, other recipes in this book), but it would be perfectly fine alone. There are potatoes in it, as well as carrots, but the extra carbs certainly help stretch the stew to serve more people.

If you don't like lamb, I'm sure it would taste great with ground beef instead! We just happened to have just the right about of ground lamb, so why not try it?
