Claire’s Roast Chicken

The passage included in the book with this recipe talks about how messy the kitchen is after Claire makes this roast chicken, but it's honestly not a hard recipe and doesn't even use a lot of ingredients or pans. This is a pretty simple roast chicken!

I'm sad to say the method didn't work very well for me. I know that a high-heat roast is a common method, but mine didn't turn out how I'd like. By the time the chicken came up to temperature, the outside of the breast was a bit dry. I do wonder if it's because of my new oven. I did use the larger of the two ovens in my range, but maybe I need to check the temperature.

The gravy method is pretty standard, and it turned out well for me. It helped cover the dryness of the meat. I wish I had the brown chicken stock from the book, but I just didn't have enough chicken bones and bits in the freezer to make that first. Next time!
