Beans Baked With Bacon and Onion

These beans are first soaked overnight, then boiled in plain water before being flavored and baked, low and slow, in the oven. It's a simple recipe, but, like all dried beans, they take some time to cook. Luckily, it's almost all hands-off time, so you need to plan in advance but you don't need to babysit the pot.

Baked beans are one of our staples, and I am certainly not above grabbing a can for a quick and easy side to go with hot dogs or other grilled or smoked meats. But if you have the time and inclination, it's easy enough to make them yourself.
