This White Bean Dip with Roasted Red Peppers is one of the things we made with our Simple White Beans (https://cookwithheather.com/Milk-Street-Fast-and-Slow-Simple-White-Beans/), also from Milk Street Fast and Slow. It's garlic-y and delicious, and very much like hummus. You don't use the instant pot for this recipe, but you do for the white beans used. (You could substitute canned white beans instead.)
You can serve this with pita chips, warm flat breads, sturdy tortilla chips, or veggies for dipping. Or it could be a tasty, protein-rich spread for a vegetarian sandwich or wrap! It packs a lot of flavor without a lot of fat.
