Tomato-Dijon Bisque
It's Always Freezer Season
When I was a kid, one of the most comforting meals on a cold, dreary day was a grilled cheese sandwich served with tomato soup for dunking. When I was feeling a little extra, I'd melt a slice of American cheese in the hot soup. I still love it to this day, but now I've upgraded my tomato soup.
Nothing against canned soup, but a good tomato bisque is a different experience. If you make this recipe, you can have some now and freeze the rest for later, making it almost as easy as the canned stuff. It's not that hard to make, either.
This is not quite the same as the soup I miss from a restaurant that is no longer convenient for me to patronize whenever I want tomato bisque, but it is really good. I'll definitely be keeping my freezer stocked.
