Deep Run Roots

This watermelon sorbet with a hint of rosemary is absolutely delicious! The bubbly rosé with the sorbet reminds us of the old fashioned punch you make with sherbet, but it's a much more sophisticated flavor. My watermelon wasn't the best (because September), but it was still great!

[00:09]: working out of vivian howard's deep run
[00:11]: roots cookbook
[00:13]: excuse my new backstage cast member
[00:17]: she's a little loud um but we're gonna
[00:20]: be making
[00:21]: summer punch i had a bunch of watermelon
[00:25]: that was honestly not so great
[00:27]: because it is the end of the end of the
[00:29]: season um
[00:31]: but i had a bunch already cut up and i
[00:33]: was looking for something to do with it
[00:34]: and i found this and it's definitely
[00:36]: something that will last for a while
[00:38]: and will probably cover up the fact that
[00:40]: it's not super great watermelon
[00:45]: so the summer punch starts with a
[00:47]: watermelon
[00:48]: rosemary sorbet so i've already made the
[00:51]: rosemary syrup
[00:53]: which is just sugar and water and some
[00:56]: rosemary
[00:57]: you bring it up to a boil and then you
[00:59]: take it off the heat and let it cool
[01:00]: down so that's super easy
[01:02]: strained the rosemary out but you can
[01:04]: see it's got a little bit of a
[01:05]: a green color and we're going to add
[01:09]: this to our cubed watermelon
[01:15]: this is overfilling my um
[01:19]: my blender but that's like max for
[01:23]: liquids and it's there's
[01:24]: this is going to blend down a lot um i
[01:27]: have some lime juice
[01:29]: i did uh use bottled lime juice for this
[01:32]: because
[01:34]: i had it i wanted to use it up and i was
[01:36]: lazy so this is not going to be
[01:38]: sort of best ingredients makes the best
[01:40]: thing but if it's delicious
[01:43]: you'll know um and then i have some
[01:46]: tequila
[01:48]: so i'm gonna add that in here and that's
[01:51]: it for the sorbet all we have to do is
[01:54]: blend this up
[01:54]: so i'm going to do that
[01:58]: there we go
[02:04]: of course i'm not plugged in all right
[02:07]: so i'm going gonna blend this up until
[02:08]: it is smooth
[02:10]: so i'm gonna hit blend
[02:15]: thanks that's about as smooth as i'm
[02:18]: gonna get and
[02:19]: look it basically is full on my
[02:23]: uh on my blender so almost overloaded it
[02:27]: but did not quite so now what i have to
[02:30]: do
[02:31]: with this is um
[02:36]: blend this through a blend
[02:40]: now what i have to do with this is put
[02:42]: it through a fine mesh sieve so i'm
[02:44]: going to do this through here
[02:45]: um into here but i'm going to have to do
[02:47]: probably two to three batches of that
[02:50]: but i'll show you how that goes so this
[02:53]: is just the sieve i used to strain out
[02:54]: the rosemary from
[02:55]: my um my simple syrup
[02:59]: and i'm gonna pour this
[03:03]: in here
[03:06]: and i'm going to sort of
[03:10]: encourage it to go through with my
[03:13]: uh my silicone spatula here
[03:16]: and i'm going to do this and transfer
[03:19]: this
[03:19]: into a container in my refrigerator
[03:24]: until we are ready to turn it to make
[03:27]: make it into sorbet so i'm gonna keep
[03:29]: doing this in batches
[03:30]: and put it in container and we'll be
[03:32]: back when we are ready
[03:34]: to make sorbet
[03:37]: so we turned our summer punch we left it
[03:41]: in the refrigerator for a while and i've
[03:42]: got a picture of what it looked like
[03:44]: after it'd been in the refrigerator it
[03:46]: did separate so um
[03:48]: and i did have to turn this in the ice
[03:50]: cream maker
[03:51]: in two batches i tried to do it all um
[03:54]: without
[03:55]: re-freezing my my
[03:58]: ice cream base the second batch did not
[04:01]: freeze quite as well but i think we're
[04:03]: okay if you don't have an ice cream
[04:05]: maker you can probably do this kind of
[04:06]: like a granita and put it in
[04:08]: um a 13 by 9 glass pan in the freezer
[04:12]: and just
[04:13]: stir it up with a fork every so often
[04:16]: so i'm hoping this turns out okay and we
[04:19]: do not have
[04:21]: cute little dessert glasses so i've just
[04:23]: got a standard
[04:25]: um uh
[04:29]: i don't know small cup glass cup that
[04:32]: i'm going to serve this into
[04:35]: so i turned it for about 20 minutes on
[04:37]: my on my thing just like the
[04:40]: bourbon slush although this got much
[04:44]: more
[04:44]: slushy because there's less alcohol in
[04:46]: this
[04:47]: um and so i will put a link to that
[04:50]: bourbon slush if you need to sort of see
[04:53]: how that whole ice cream maker process
[04:55]: works
[04:56]: but it was very simple at that point
[04:58]: just have to make sure you stir it
[04:60]: because it did take two batches in my
[05:02]: ice cream maker which is sort of a
[05:03]: standard
[05:04]: home one so we have that we have our
[05:07]: summer punch our basically watermelon
[05:09]: sorbet and we have a
[05:11]: sparkling rose we are supposed to have
[05:15]: some diced watermelon small diced
[05:18]: watermelon
[05:19]: to put on top of it but honestly
[05:22]: it is the end of september and i don't
[05:25]: think we
[05:26]: can get really good watermelons here
[05:28]: anymore and also
[05:30]: i don't like to bite and chew really
[05:33]: cold things because it hurts my teeth
[05:35]: so i'm not gonna be doing that today but
[05:38]: so we are going to see if we can sort of
[05:42]: scoop some of this out
[05:47]: and put it in oh of course i'm making a
[05:50]: mess over here
[05:53]: it's pretty good it's not forming a good
[05:55]: ball
[05:56]: but it's you know coming out
[05:60]: pretty well it doesn't seem like it's
[06:01]: super icy so that's good
[06:03]: and the tequila will help with that and
[06:05]: so will the
[06:06]: sugar which there's a relatively high
[06:08]: sugar
[06:10]: content in this
[06:13]: so i'm just going to serve this up
[06:17]: i don't think she gives any indication
[06:19]: basically just spoon it into the bottom
[06:21]: of a chilled glass
[06:23]: i forgot to show my glass sorry um
[06:27]: but i did chill my my sparkling rose
[06:31]: so yeah it seems like it's actually a
[06:33]: very good texture not super icy
[06:36]: so that's good
[06:43]: and then once i get however much i think
[06:47]: is
[06:49]: enough i'm going to top it
[06:53]: with some of our sparkling rose
[06:59]: and then you should eat this with a
[07:01]: spoon
[07:06]: there we go and there you have
[07:10]: summer punch from deep run roots
[07:20]: now i'm going to take a little taste
[07:23]: like i usually do with the
[07:25]: drinks here and let you know what i
[07:29]: think
[07:35]: that's really good um i don't know how
[07:37]: we're not big
[07:39]: sparkling wine fans honestly we don't
[07:41]: drink it a lot
[07:42]: and so i don't think we've ever had this
[07:43]: before i don't know how sweet it is on
[07:44]: its own
[07:46]: but um the
[07:49]: the watermelon sorbet
[07:52]: really makes it very sweet
[07:59]: but a little tangy on the on them on my
[08:01]: tongue
[08:03]: that little bubbly sensation i really
[08:06]: enjoy it
[08:07]: it's great it's very refreshing for the
[08:10]: summer
[08:11]: we are in one of the last warm days that
[08:14]: we'll have for a while so
[08:15]: we're gonna enjoy this and if you
